<P>PROBLEM TO BE SOLVED: To provide a method for cooking rice capable of improving yield of cooked rice without spoiling palate feeling of the cooked rice. <P>SOLUTION: This method for cooking rice comprises adding albumen, a potassium salt and soybean polysaccharides to rice, and further adding a sodium salt to the mixture when cooking the rice, and adjusting pH to 3.0-9.0 when cooking rice.
