摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing wheat germ highly containing &gamma;-aminobutyric acid, having high &gamma;-aminobutyric acid content, causing less proliferation of bacteria, easy to dry and having low energy cost, to provide wheat germ highly containing &gamma;-aminobutyric acid produced by the method and to provide wheat flour highly containing &gamma;-aminobutyric acid and mixed with wheat germ highly containing &gamma;-aminobutyric acid. <P>SOLUTION: This method for producing the wheat germ highly containing &gamma;-aminobutyric acid includes a process of adding &le;35 mass% of water to wheat germ and keeping the product at 50&deg;C-60&deg;C. The wheat germ highly containing &gamma;-aminobutyric acid produced by the method is provided. The wheat flour is obtained by mixing the wheat germ highly containing &gamma;-aminobutyric acid thus obtained with wheat flour and has &ge;5 mg of &gamma;-aminobutyric acid per 100g. <P>COPYRIGHT: (C)2006,JPO&NCIPI
