<P>PROBLEM TO BE SOLVED: To provide a method for producing wheat germ highly containing γ-aminobutyric acid, having high γ-aminobutyric acid content, causing less proliferation of bacteria, easy to dry and having low energy cost, to provide wheat germ highly containing γ-aminobutyric acid produced by the method and to provide wheat flour highly containing γ-aminobutyric acid and mixed with wheat germ highly containing γ-aminobutyric acid. <P>SOLUTION: This method for producing the wheat germ highly containing γ-aminobutyric acid includes a process of adding ≤35 mass% of water to wheat germ and keeping the product at 50°C-60°C. The wheat germ highly containing γ-aminobutyric acid produced by the method is provided. The wheat flour is obtained by mixing the wheat germ highly containing γ-aminobutyric acid thus obtained with wheat flour and has ≥5 mg of γ-aminobutyric acid per 100g. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
