The invention relates to the biotechnology and concerns dairy industry, in particular producing hard rennet cheeses with a high temperature of the second heating. The method provides preparing the inoculate of propionic acid and lactic-acid bacteria, cultivation of microorganisms in the growth medium, isolation of biomass, mixing with protective medium and sublimation drying, moreover to the composition of the bacterial concentrate as propionic acid bacteria added is the strain of Propionibacterium freudenreichii ssp. shermanii IMB B-7125, being cultivated for 11-12 hours at the temperature of (30+- ) DEGREE C, at that the amount of inoculate is of 5% of the growth medium volume, thereafter incorporated are lacticûacid bacteria of the species Streptococcus salivarius ssp. thermophilus and lactic-acid bacteria of the strain Lactobacillus delbrueckii ssp. bulgaricus IMB B -7123 and strain Lactobacillus helveticus IMB B -7122 at a ratio of 4:1:2 and at an amount of 5% of the growth mediumvolume and general cultivation is continued for 8-9 hours at the temperature of (38+- 1) DEGREE C. The improvement of processes of microorganisms cultivation allows to prepare (600+- 50) g of dry bacterial concentrate with 100 dm3 of growth medium, the amount of viable cells of lactic-acid bacteria in 1 g of which is at the level of (5.0-7.0) 1010, and propionic acid - (1.0-3.0) 109 cells. The applied method enables to obtain the bacterial concentrate for a direct incorporation with a high level of biological activity, which will allow to produce hard rennet cheeses without additional preparation of production ferment with a high temperature of the second heating and improved organoleptic properties
