<P>PROBLEM TO BE SOLVED: To provide an emulsion stabilizer for milk beverage enabling obtaining milk beverage suppressed in flotation of milk components in milk beverage packed in a hermetic container after being subjected to heat sterilization and excellent in emulsion stability after long preservation, and to provide milk beverage containing the emulsion stabilizer. <P>SOLUTION: This emulsion stabilizer for the milk beverage contains sucrose fatty acid ester, lactate fatty acid ester or its salt, and polyglyceryl fatty acid ester with a clouding point of ≥80°C measured at 1 wt.% concentration in 20 wt.% of sodium chloride aqueous solution.
