DISPERSIBILITY IMPROVING AGENT OF MILK COMPONENT AND ACID MILK BEVERAGE

PROBLEM TO BE SOLVED: To provide a dispersibility improving agent of milk components suppressing separation, coagulation and precipitation of milk components in an acid milk beverage for a long period and efficient in workability and production cost, and to obtain an acid milk beverage produced using the dispersibility improving agent.

SOLUTION: The acid milk beverage is obtained by adding the powdery dispersibility improving agent having as the main ingredient of polyglyceryl fatty acid ester with HLB 7-11 having a main constituent fatty acid composed of at least one kind selected from palmitic acid, stearic acid and behenic acid to acid milk beverage.
