Described is a machine for removing thorns from vegetables, fruits and food in general using pulsed light as a means for achieving the aforesaid action. The process is carried out by a selective absorption effect, which comprises selecting the required light wavelength for exclusively absorbing the thorn and/or the intermediate zone about the same, thereby removing the thorn. The light absorption in the remaining surface of the product is minimum, thus preventing the product from being damaged. An automated system moves the product to be treated, or the light beam, thereby sweeping the whole product surface until thorns have been completely removed.
