In a process to make sausages the sausage meat is introduced into a flexible skin and the sausage ends waisted followed by application of a clip closure. The clip closure is applied with a force that is not below a lower threshold value but retains the clip in the desired position. The force does not exceed a second upper threshold value that does not damage the skin. Also claimed is a commensurate clip application assembly and a commensurate sausage skin with clip closure.
