A contact heat transfer cooking system has an electric cooker plate (11) with a cooking surface (23) having a macro- and micro-unevenness (i.e. deviation from an ideal flat surface and roughness) which does not exceed 0.1 (pref. 0.05) mm. in the major part of its cooking region (22) in the temperature range between room temperature and about 500 K. Also claimed is a contact heat transfer cooking system including an electric cooker plate (11) and a cooking vessel (25) which are matched so that the macro- and micro-spacing between their associated surfaces (23, 24) does not exceed 0.1 mm. in the major part of the cooking region (22) in the range between room temperature and about 500 K. Pref. the cooker plate body (14) comprises a non-oxide ceramic disc, esp. of silicon nitride-based ceramic optionally containing silicon carbide and additives, and may be bonded to a mounting plate (pref. of hard glass, glass-ceramic, special steel or natural or artificial stone) pref. by a heat resistant silicone adhesive.
