The assembly to sanitize biological materials, especially a biomass to be processed to yield a biogas, has a vessel (10) to contain the material with a system to raise or lower its temperature. The vessel has an inner pipe (30), where its outer wall is at a gap from the vessel wall in at least one zone. A displacement (40) generates a flow within the pipe, and in the gap between the pipe and the vessel wall. The vessel has a double wall (13,14), giving a flow zone (20) for a heating/cooling medium.
