The accessory for a mould filling hopper (52) used in the manufacture of large cheeses where the curds and whey are tipped directly into the mould from a manufacturing vat consists of a skirt or sleeve (51) of largely cylindro-conical shape, made from a supple and permeable textile material attached to the upper end of the hopper and located inside it. The shape of the skirt creates a gap (55) between it and the inner surface of the hopper into which the whey can percolate for faster removal, while the finest grains of the curds are retained. The sleeve can be fastened to the top of the hopper by an elastic band that allows it to be removed for washing separately from the hopper and replaced.
