<P>PROBLEM TO BE SOLVED: To provide a plastic oil-and-fat composition containing a direct β-type oil-and-fat crystal, having improved crystallinity in the case of low content of the direct β-type oil-and-fat crystal, exhibiting good plasticity even at a low content of the direct β-type oil-and-fat crystal, and exhibiting suppressed increase of crystal size and variation of hardness, etc., in the storage for a long period. <P>SOLUTION: The plastic oil-and-fat composition contains a direct β-type oil-and-fat crystal and a tri-saturated triglyceride composed of fatty acids composed solely of ≥16C fatty acids in the oil phase.
