<p>The brine injection system has arrays (10) of hollow needles (16) connected to cylinders (20) with pistons, inlets (22) and inlet valves (24). A concentrated salt solution passes through the inlets and is injected into lumps of meat (14) via the needles. The lumps of meat lie on a table (12). The needles are pushed downward through a lower guide plate (18) held on a central column with a pneumatic drive (34) and a cam system (26) drives the brine injection cylinders. There are drive systems (36) for arrays of cleaning needles (32) which may be pushed down into the hollow needles.</p> |
