PROBLEM TO BE SOLVED: To provide a formulation of sponge for cake using egg and wheat flour safely eatable by patients allergic to egg and wheat flour, or using (containing) completely no egg and wheat flour components. SOLUTION: This formulation of sponge for cake (1) comprises using completely no wheat flour or components derived from wheat flour and no egg or components derived from egg and instead of these raw materials, using rice powder, milk protein and edible oil and fat, and (2) has 3-20 wt.% of milk protein, 3-20 wt.% of edible oil and fat, 25-50 wt.% of rice powder and 10-69 wt.% of glucide. (3) The rice powder of the formulation comprises quality rice flour having nonglutinous rice as the raw material and (4) the milk protein thereof comprises whey protein. COPYRIGHT: (C)2006,JPO&NCIPI
