<P>PROBLEM TO BE SOLVED: To obtain a food of raw ham palatability of albacore, which makes the best use of color tone (pink color)/shape (streak pattern)/flavor of albacore without impairing them, provides the same palatability as that of raw ham, has an additional value in commodities, is placed on bread, crackers, etc., is edible as an appetizer and also a staple food even by a simple process and to provide a method for producing the same. <P>SOLUTION: The food of raw ham palatability of albacore is obtained by processing albacore so as to have raw ham palatability. The method for producing the food of raw ham palatability of albacore comprises a cut process for cutting albacore into a proper size, a process for immersing the cut albacore in salt water, a process for drying the immersed albacore and a process for smoking the dried albacore. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
