<P>PROBLEM TO BE SOLVED: To provide a production technology of Miso (e.g. fermented soybean paste) containing cheese, simple and suitable for large item small volume production. <P>SOLUTION: This method comprises mixing cheese with Miso usable as a product at a temperature higher than the melting point of the cheese but lower than the thermal death point of the yeast in the Miso. The Miso containing the cheese is produced by separately adding Miso yeast to the mixture and fermenting at the above prescribed temperature so as to produce the Miso containing cheese obtained by added the cheese to the Miso. The Miso for use is an ordinary Miso such as rice Miso, barley Miso and soybean Miso, and, as the cheese, natural cheese can be used. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
