<P>PROBLEM TO BE SOLVED: To provide a new limitedly hydrolyzed casein and method for producing the same, a method for producing a hydrolyzed milk product, other milk products such as processed milk including the limitedly hydrolyzed casein, a functional food, a specified health food and other foods, a cosmetic, a medicine or a quasi drug. <P>SOLUTION: This limitedly hydrolyzed casein produced by effecting a limitedly lytic enzyme on the milk, milk products, casein or a β-casein to produce the limitedly hydrolyzed casein constituted with a component having approximately 20,000 molecular weight and a component having approximately 10,000 molecular weight is provided by having an N-terminal amino acid sequence of [Leu-Val-Tyr-Pro-Phe]. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
