A food composition comprising at least one food ingredient and in its aqueous or instant powder form contains a monoglyceride enriched with unsaturated compounds comprising monoolein C18:1 (0-90%), monolinolein C18:2 (0-90%) and monolinolenin C18:3 (0-90%). The composition has a mesomorphic structure (a cubic, lamellar or hexagonal structure encapsulating or associating the food ingredient) in an aqueous phase. An Independent claim is also included for the production of the food composition comprising: (1) mixing the food ingredient (optionally in aqueous phase) with the monoglyceride; and adding the obtained ingredient to the rest of the composition; (2) adding water to obtain the mesomorphic structure; and (3) adding the obtained ingredient to the rest of the composition (containing water when the food ingredient is in aqueous phase).
