FIELD: food industry. ^ SUBSTANCE: invention relates to a method for preparing nutritive ethyl alcohol. Method involves preparing grain mixture, its aqueous-heat treatment and treatment with liquefying and acid-resistant saccharifying enzyme preparations to obtain a must that is acidified with sulfuric or lactic acid to pH value 3.5-3.9 followed by addition of yeast to the prepared must, its fermentation to obtain a matured mash, distillation of the latter to obtain depleted distillery grains and a distillate and purifying a distillate to obtain the end product.
