FIELD: food processing industry, in particular production of soft caramel. ^ SUBSTANCE: claimed method includes extraction of dry biomass of Saprolegia parasitica micromycete with non-polar extractant in above-critical state followed by separation of the first extract. Then biomass is subsequently extracted with water, alkali, water, acid, water, alkali, and water and obtained solid residue is blended with the first extract. To produce soft caramel mixture containing at least sweetener, plasticizer and preparation from biomass of Saprolegia parasitica micromycete is boiled down. Prior boiling down mixture may be blended with additional components such as taste and aromatic additives. Method of present invention makes it possible to reduce consumption of preparation from biomass of Saprolegia parasitica micromycete by 12 % in contrast with total consumption of gelatin and phosphatides without losses of viscosity-plastic characteristics. ^ EFFECT: reduced consumption of processing additives. ^ 2 ex |
