<p><P>PROBLEM TO BE SOLVED: To provide a method for producing garden-grown raw green asparagus pickles without adding heat treatment process to off-specification garden-grown raw green asparagus which is conventionally disposed and cannot be shipped. <P>SOLUTION: This method for producing the garden-grown raw green asparagus pickles comprises partly peeling garden-grown raw green asparagus to make the asparagus beautiful even in aesthetic sense, and infiltrating the product with 3% heat-treated brine solution for 10-15 h, and pickling the product in a pickle solid for 4-5 days. Preferably, the pickle solid contains as its main body, rice, malt and salt at a weight ratio of 1:1:0.5, and also mustard and alcohol. <P>COPYRIGHT: (C)2006,JPO&NCIPI</p> |
