<p><P>PROBLEM TO BE SOLVED: To provide a method for producing garden-grown raw green asparagus pickles without adding heat treatment process to off-specification garden-grown raw green asparagus which is conventionally disposed and cannot be shipped. <P>SOLUTION: This method for producing the garden-grown raw green asparagus pickles comprises partly peeling garden-grown raw green asparagus to make the asparagus beautiful even in aesthetic sense, and infiltrating the product with 3% heat-treated brine solution for 10-15 h, and pickling the product in a pickle solid for 4-5 days.
