The mackerel containing chitin-chitosan obtained by soaking in a solution containing chitin-chitosan and inorganic compositions is provided. It is reduced in a fishy smell and increased in storage properties while having a high content of chitin-chitosan. The mackerel is prepared by dressing a mackerel and then soaking in a solution containing chitin-chitosan for 5 to 15min. The solution containing chitin-chitosan comprises 3 to 10% by weight of chitin-chitosan and 0.1 to 0.5% by weight of inorganic composition, based on 100% by weight of the solution. The inorganic composition contains below 1.5% by weight of iron oxide(Fe2O3), below 4% by weight of magnesium oxide(MgO), below 16% by weight of aluminum oxide(Al2O3) and 65% by weight of silicon oxide(SiO2). |
