摘要 PURPOSE: A method of making dark-colored red ginseng by steaming fresh ginseng and extracting the obtained dark-colored red ginseng at low temperature to avoid the reduction in an amount of ginsenoside RB1, RB2, Rc, Rd, Re, Rf or the like is provided. It reduces the processing time to less than 12hr from 50 days required for the manufacture of conventional dark-colored red ginseng and reduces the content of lipid peroxide while maintaining the content of a polar saponin. CONSTITUTION: Fresh ginseng is washed, treated to remove foreign material and dried. Then, the dried ginseng is added with water and steamed in a closed vessel at 140 to 180deg.C at a pressure of 2.0x10¬5Pa to 1.0x10¬6Pa for 8 to 12hr to give dark-colored red ginseng, which is extracted at 85 to 95deg.C for 12hr in a solvent such as water or alcohol in a glass vessel, ground to 400meshes or less and then encapsulated.
