<P>PROBLEM TO BE SOLVED: To provide a water-soluble oil and fat preparation for making a food material have easiness of getting loose, grazing properties, gloss, and antibacterial properties, and making the food material calorific. <P>SOLUTION: The water-soluble oil-and-fat preparation is obtained by formulating edible oil and fat with (1) at least one kind selected from a glycerin monooleate having ≥2 of glycerin polymerization degree, a monolaurate and a monomyristate, (2) enzymatically hydrolyzed lecithin and/or lecithin, and (3) ethanol, and does not contain a sucrose unsaturated fatty acid ester and a polyglycerol condensed ricinoleic acid ester. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
