摘要 FIELD: food processing industry, in particular production whitened coffee beverages. ^ SUBSTANCE: stable whitened coffee concentrate contains more than 25 % of solids and represents mixture of milk solids, soluble coffee solids, and coffee flavoring. Coffee flavoring has total organic compounds more than 300 mg/100 g of coffee concentrate. Coffee flavoring stabilizes whitened coffee concentrate and prevents milk protein flocculation and acidity elevation that results in milk component coagulation.
