摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing slightly-sweetened boiled chestnuts comprising using trehalose or galactooligosaccharide for a process of producing sweet-boiled chestnuts to produce slightly sweetened boiled chestnuts having good-quality sweetness, suppressed in sweetness degree to be less than half of usual one while having the same sweetness degree as that of conventional sweet-boiled chestnuts produced using sugar, and also not causing browning on syrup due to heating treatment. <P>SOLUTION: The method for producing slightly sweetened boiled chestnuts comprises using trehalose or galactooligosaccharide in place of sugar in a process of producing syrupped sweet-boiled chestnuts so as to reduce the sweetness degree to be less than half of usual one while maintaining water activity which suppresses increase of microorganism. <P>COPYRIGHT: (C)2006,JPO&NCIPI
