<P>PROBLEM TO BE SOLVED: To provide a Chinese-noodle flavor imparting agent applicable to being added to raw material powder without causing deterioration due to brine or browning during storage even when added: and to provide a method for producing noodles. <P>SOLUTION: The Chinese-noodle flavor imparting agent is obtained through mixing egg with oil and fat, heating the mixture followed by eliminating oil-and-fat insoluble components from the mixture via filtering or the like to obtain oil and fat (egg oil), and desirably adding 10-100 g of the oil and fat component (egg oil) to 1 kg of the raw noodle material powder for noodles to produce the noodles. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
