<p>A process and assembly is used for the prepn. and processing of thin, edible foods made from raw batter which is subsequently baked in forms while the batter expands. The lower half of the baking form (16) is located in the lower section (13) of a pair of baking tongs (7), while the upper half (17) of the baking form is located in the upper (15) tongs (7) section. The two halves (17, 18) of the form (13, 15) have stop surfaces (68c,68d) and sealing surfaces (17a, 18a, 21a, 22a) and are in mutual contact when the baking form is closed. The novelty is that one or more clamp (30,31) devices are provided to press the form halves (17, 18, 21, 22) of the closed baking form (16) together with a predetermined clamping force during clamping, eliminating the play between them. The upper tongs section (15) can be guided by means of a lateral guide strut (14) in the lower tongs section (13). Mechanisms can be provided between the baking tongs within the tongs chain in the baking oven, to open or close the dies when passing a deviation within the chain, by means of baking tongs which have two-part dies in the lower tongs section.</p> |
