A composition comprising statin wherein the composition is a flour comprisin g less than 10 wt.% of fat and the use of the composition comprising statin in the preparation a food product is disclosed. The process for the preparation of the composition comprising statin comprises the steps of fermeting a substrate with a statin producing fungus and of extracting the substrate.
