ENCAPSULATION OF OXYGEN-SENSITIVE AGENT

PROBLEM TO BE SOLVED: To use a mixture of modified starch with casein and/or soybean protein for encapsulating an oxygen-sensitive agent.

SOLUTION: The mixture of the modified starch with the casein and/or the soybean protein for encapsulating the oxygen-sensitive agent, and a method for using the same are provided. The modified starch is a starch derivative containing a hydrophobic group or both the hydrophobic and a hydrophilic group. The starch derivative has further enzymatically been hydrolyzed by an exo-enzyme. The protein is selected from the group consisting of casein and soybean protein. The encapsulated materials have a high level of an active agent and retentivity, and provide excellent oxidation resistance. Further, the encapsulated materials are useful in a variety of products, including food products.
