METHOD OF DETERMINING QUANTITATIVELY PIGMENT CONTENT IN VEGETABLE USING IMAGE ANALYSIS

PROBLEM TO BE SOLVED: To provide a method of determining quantitatively a pigment such as carotenoid and chlorophyll contained in a vegetable such as rootcrops and fruits. SOLUTION: A digital image of the vegetable such as a carrot and spinach is photographed using a digital image photographing device as a device suitable for evaluating a color value of the whole surface of the vegetable, a pigment content is calculated from color information of the vegetable of an unknown pigment quantity, based on information as to a correlation between color information calculated from the digital image and a pigment quantity of the vegetable.
