PROBLEM TO BE SOLVED: To provide an easy, safe and inexpensive method whereby high-quality starch can be prepared within a short period of time in an improved yield. SOLUTION: The preparation method for the sweet potato starch comprises at least a grinding step, a soil-flesh layer separation step and a precipitation separation step, wherein at least one of the steps is performed in the presence of a sucrose fatty acid ester and/or a polyglyceriol fatty acid ester. Preferably, the sucrose fatty acid ester and/or the polyglyceriol fatty acid ester has an HLB of≥3 and is added in an amount of 0.001-5 wt.%. COPYRIGHT: (C)2006,JPO&NCIPI
