摘要 <P>PROBLEM TO BE SOLVED: To provide a method for simply measuring the concentration of a chemical agent, a freshness keeping preparation for food and a manufacturing method of cut lettuce to which a browning preventing function is imparted. <P>SOLUTION: In the method for measuring the concentration of the chemical agent (1), an alkali metal salt is allowed to be present in a solution containing the chemical agent of which the concentration is desired to be known in a definite ratio with respect to the chemical agent and the concentration of alkali metal ions in the solution is measured to calculate the concentration of the chemical agent in the solution from the concentration of the alkali metal ions. The alkali metal salt is added in order to measure the concentration of the alkali metal ions in the solution to calculate the concentration of ferulic acid in a solution containing the freshness keeping preparation for food from the measured concentration. The freshness keeping preparation for food (2) contains ferulic acid and the alkali metal salt. In the manufacturing method of cut lettuce to which a browing preventing function is imparted (3), washed lettuce is immersed in an aqueous solution containing ferulic acid and the alkali metal salt while keeping the concentration of ferulic acid in the aqueous solution constant or above. <P>COPYRIGHT: (C)2006,JPO&NCIPI
