<P>PROBLEM TO BE SOLVED: To provide a method for treating soybeans utilizable even if Ishimames (immature beans) are present. <P>SOLUTION: The very practicable method for treating the soybeans, applicable to the whole soybean-utilizing foods such as soy sauce, Miso (fermented soybean paste), Natto (fermented soybeans), cooked beans and bean curd involves cutting the skins of the soybeans to enable the soybean including the Ishimames to absorb water sufficiently even if the Ishimames in several percentage points are mixed. The risk of elution of useful components such as water-soluble nitrogen in soaking water at water absorption and soaking is reduced minimum because only the skins of the soybeans are cut and the skins are not completely removed. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
