PROBLEM TO BE SOLVED: To obtain dough for hotcakes, which provides soft and crisp hotcakes. SOLUTION: The dough for hotcakes is obtained by kneading a dough raw material consisting essentially of grain flour with 1-30 parts by mass based on 100 parts by mass of the grain flour of a compound material composed of at least a gelling agent, milk protein and water.
