<P>PROBLEM TO BE SOLVED: To obtain a loosening agent for processed cooked rice, which improves the loosened state of cooked rice and prevents quality deterioration occurring during a production process or in a period in which a product is eaten after preservation, and to provide a method for producing processed cooked rice using the same. <P>SOLUTION: The loosening agent for processed cooked rice comprises a sulfate group-containing saccharide.
