PROBLEM TO BE SOLVED: To provide a method by which a homogeneous sweet potato juice- containing beverage without causing the separation of pulp content or starch grains, resultantly good in appearance and throat passableness and suitable for drinking can be produced in good yield. SOLUTION: A sweet potato is heat-treated under conditions for substantially inactivating a polyphenol oxidase contained therein and activating an amylase so as to provide 1.0-10 wt.% of maltose content thereof. The resultant heat- treated sweet potato is then pressed to press and extract a juice under prescribed conditions with a pressing type juice extractor equipped with a screw and a screen surrounding the screw. Carrageenan or a cellulose and/or a cellulose formulation having a specific particle diameter are then added to the prepared beverage containing the pressed and extracted sweet potato juice so as to provide a prescribed concentration in relation to the pH of the whole beverage. |
