In a continual process to manufacture a confectionery product from a semi-solid substance, a mass (5) of the substance is pressed to form an elongated hank (7) that is released onto a first conveyer belt (8) and advances via the belt end (20) towards a guillotine (32) and cut transversely into portions (34). Each section is then pressed into its final shape. The food is embossed to shape from both above and below by rollers. Also claimed is a suitable assembly.
