KAESHI, METHOD FOR AGING THE SAME AND METHOD FOR PRODUCING THE SAME, AND SOUP AND METHOD FOR PRODUCING THE SOUP

PROBLEM TO BE SOLVED: To provide a method for aging Kaeshi (a reasoned soydeuce) by which the aging can be carried out in a short time and to provide a method for producing the Kaeshi or a soup utilizing the method.

SOLUTION: Soy sauces are mixed with saccharides and/or sweet Sake and prepared. The resultant mixture is then stored in a vessel and air is forcedly blown into the vessel and thereby the mixture is brought into contact with bubble-like air to carry out aging. The resultant Kaeshi is mixed with a soup stock and prepared to produce the soup.
