<P>PROBLEM TO BE SOLVED: To provide a quercetin-containing health food or a material thereof by efficiently collecting a flavonol pigment, quercetin, which is considered to have an antioxidative action and is effective for preventing various diseases. <P>SOLUTION: A material containing a high concentration of quercetin is produced by mixing a quercetin-containing liquid, prepared by extracting a quercetin-containing plant material with an aqueous solvent, with a protein. The quercetin-containing food material is produced by mixing a quercetin extract obtained from onion skin with a protein that is harmless from a food sanitation standpoint and isolating and drying the obtained insoluble matter. Quercetin is purified by adding a hydrophilic organic solvent to the material containing a high concentration of quercetin, removing the insoluble matter and separating the quercetin-containing liquid. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
