<P>PROBLEM TO BE SOLVED: To provide a method for producing capsicum-containing soy sauce as a seasoning in view of the fact that as red capsicum has hot taste firmly, it is harvested at that time and intended to use for its appropriate application as a seasoning after undergoing processing. <P>SOLUTION: The method comprises the following procedure: Red capsicum is harvested, washed with water followed by taking its calyx off. The resultant red capsicum is dried thoroughly at room temperature. Appropriate amounts of granular Japanese pepper, garlic, Sake and Mirin(sweet Sake for seasoning) are added to soy sauce, respectively. The resultant soy sauce is put into a container and the above-processed red capsicum is then put into the container followed by sealing up. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
