PROBLEM TO BE SOLVED: To easily produce germfree and substantially endotoxin-free gelatine for medical use or biochemical use. SOLUTION: The method for producing gelatine comprises treating an animal tissue by immersing it in a solution of calcium hydroxide and a quaternary ammonium salt, removing the treatment solution, adjusting the pH by aseptically neutralizing the residue without changing the vessel, washing the neutralized residue with water for injection, further adding water for injection to the washed residue, and extracting gelatine from the washed residue under heating.
