<P>PROBLEM TO BE SOLVED: To provide a method for suppressing generation of acrylamide by which acrylamide generated in food during high-temperature heating treatment when producing processed food: and to provide an acrylamide generation depressant. <P>SOLUTION: The acrylamide generation depressant effectively comprises calcium salt, basic amino acid or its salt, and/or rosemary extract, in particular, calcium chloride, calcium dihydrogenpyrophosphate, calcium sulfate, calcium dihydrogenphosphate, histidine or its salt, and lysine or its salt because of their strong effect. The acrylamide generation depressant is added to the processed food consisting mainly of carbohydrate in a process prior to the heating treatment. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
