摘要 <P>PROBLEM TO BE SOLVED: To provide a method for suppressing generation of acrylamide by which acrylamide generated in food during high-temperature heating treatment when producing processed food: and to provide an acrylamide generation depressant. <P>SOLUTION: The acrylamide generation depressant effectively comprises calcium salt, basic amino acid or its salt, and/or rosemary extract, in particular, calcium chloride, calcium dihydrogenpyrophosphate, calcium sulfate, calcium dihydrogenphosphate, histidine or its salt, and lysine or its salt because of their strong effect.
