<p><P>PROBLEM TO BE SOLVED: To provide efficiently in a short time pickling paste causing extremely low breeding of germs even without stirring for a long period and having stable quality, with an easy raw material, operation and process and to provide a method for producing pickles with high flavor using the pickling paste. <P>SOLUTION: The pickling paste comprises a fermented product obtained by further adding cereal flour excluding wheat flour and/or rye flour to a first fermentation substrate obtained by fermenting wheat flour and/or rye flour with yeast and lactic acid bacterium, and successively fermenting the product at least one time.
