<P>PROBLEM TO BE SOLVED: To provide a vinegar of husk-removed and deodorant soybeans, having excellent amino acid content. <P>SOLUTION: The vinegar of the husk-removed and deodorant soybeans is obtained by fermenting and maturing powder of the husk-removed and deodorant soybeans as a raw material, and has ≥850 mg/100 ml amino acid content expressed in terms of a formol nitrogen value.
