The assembly for heating a confectionery mass has a tubular mantle (10) around a bundle of heated tubes for the flow of a heat carrier through them, which are parallel to the axis of the tubular mantle. The confectionery mass passes through the interior of the tubular mantle between a lower inflow (13) and an upper outflow (14) at opposite ends. A central cylinder (20) is within the tubular mantle, with a single spiral flow guide (40), with its outer edge against the inner surface (11) of the tubular mantle and the inner edge against the central cylinder. The ends of the tubular mantle are covered by closing plates (15,16).
