摘要 FIELD: food processing industry, in particular canner industry. ^ SUBSTANCE: claimed method includes fruit preparation, cavity fruit crushing in sugar solution and puree separation under aseptic conditions. Cavity crushing is carried out by dispersing under atmospheric pressure in mixture of fruit with myscelle sugar solution. Myscelle is obtained from biomass of Mortierella exigua micromycete by subsequent extraction with non-polar liquefied gas, water, alkali, water, acid, water, alkali, and water.
