摘要 PROBLEM TO BE SOLVED: To provide a frozen product of fish meat such as dropped meat, fillet and sliced fish, suppressed in production of freeze denaturation caused by decomposition of trimethylamine-N-oxide (TMAO), and to provide frozen food containing the fish meat. SOLUTION: The frozen product of fish meat, preferably whitefish meat, such as dropped meat, fillet and sliced fish is suppressed in production of freeze denaturation caused by decomposition of TMAO through adjusting the pH of fish meat to≥7. The frozen food containing the fish meat is also provided. In detail, alkaline seasoning liquid oxygen is added, poured or soaked to the fish meat such as dropped meat, fillet and sliced fish.
