PROBLEM TO BE SOLVED: To obtain a preferable situation for use from the view-point of sanitary management by separating a pre-heat-treatment environment and a post-heat-treatment environment. SOLUTION: The subject heat treatment system consists of a carriage 2 running with tableware 1 loaded thereon and a treatment device 3, which comprises a heating chamber 31 where the carriage loaded with the tableware 1 runs into or out, and a heating mechanism for heating the tableware 1 and the carriage 2 entering the heating chamber 31. The heating chamber 31 of the treatment device 3 has separately formed entrance 311 and exit 312 which are independently opened/closed, and is formed in such a shape that a plurality of carriages 2 can be juxtaposed in the front/rear direction of the carriage 2 running into/out of the heating chamber. A delivery mechanism 35 for driving/delivering the carriages 2 one by one from the entrance 311 to the exit 312 is mounted inside the heating chamber 31 of the treatment device 3.
