A sausage that is cooked by simmering hot water or grilled, is prepared from a meat containing 50 to 60 % minced meat from a pickled knuckle of pork but without the bone. The recipe further incorporates 20 to 30% animal fat (pork belly, pork cheek), 15-20% crushed ice, and 10% pickled chipped gherkins drained of all fluid. The gherkins are minced and drained of fluid by centrifuge at least four hours prior to mixing with the minced meat. Further suitable herbs and spiced as admixed to the chipped gherkins. |
