The tertiary processing of olive oil production dregs comprises physical separation of sludge and fat for oxygenation of the dregs and chemical dispensing to decrease the organic matter content. Also claimed is apparatus implementing the process. The apparatus also reduces the phenols concentration and the biological oxygen demand (BOD), with final filtration of the product of chemical dispensing.
